Reunited at Mateo

Boulder has been so peaceful lately as fall slowly makes its entrance. Supposedly it is suppose to sprinkle a little snow Sunday evening! I am not sure I am ready for that.

One thing I do know is that fall is my favorite time of year. The colors in Boulder are so vibrant and the weather is so relaxing. Plus its a nice change of wardrobe as we make our way into the colder months.

This evening Ryan and I met up with my old roommate for a first time meal at Mateo Restaurant.

The menu on the website definitely offers more than what we were presented with once seated. I feel this restaurant is a bit hidden on Pearl, set further down off of 19th. I liked how it was small, and seem pretty intimate…  Until a large group of people came in and I swear every little word, laugh and joke was echoed throughout the whole place.

Service was darn good, I felt like they took good care of us. I wasn’t too thrilled with my menu options for the night, but made due.

I started off with the usual roasted beet – goat cheese salad  (Watercress on the menu)  I really liked it because it was so fluffy and light. There were no heavy dressings weighing it down.

Entrees included:

chicken frites petaluma chicken +  fresh tarragon + beurre fondue

Yes, folks that is allllll butter.   Lots and lots and lots of it. While I should have known that the dish was more than likely going to be heavy with butter (after all, it is French food) I was not expecting the chicken to be as greasy/lots of skin as it was.

The chicken was very delicious, the under portion was drenched in way too much butter and appeared fried???  Considering I hardly ever order chicken as a main entree, it was tasty to me.  It also came with fries — which were definitely delicious. Very crispy, just the way I like them!

As usual, Ryan was very pleased with his burger and fries!

Joe and I both agreed that we weren’t in love with the chicken. Joe said he would give it 6 out of 10 on the Joe taste – o – meter.  For as buttery as the chicken was I didn’t feel weighed down or overly full – which was a plus!

Downside = no gluten free menu. But the waiter was helpful in making suggestions on the menu.

All in all, I had a great evening there. Wonderful conversation + good service + tasty meal = good night out!

Dark Chocolate Addict

So I am addicted to these dark chocolate bars, made by THEO

I love this company because it is Organic +  Fair Trade + Delicious

My rule of thumb when it comes to the dark stuff:

Only buy dark chocolate that is at least 70% cacao!

This bar tastes so much like Mint Chocolate Chip ice cream….  seriously probably the best d. choc. bar I have had so far!

For those of you with a taste for bitter cacao – Theo also makes a 91% cacao bar!

SALT of Life.

Where in the world has Boulder Bite been?

Obviously I have not been around for quite some time. The end of this summer and start of school left me in an awkward predicament. I was home in Nebraska for awhile and then back in Boulder, living out of suit case and at Ryan’s apartment. I am quite thankful I was able to have a place to stay, but I am even more grateful to be in my own home.

Obviously a lot happens in such a short amount of time, I have many ideas and posts for the future so I hope you are looking forward to them as much as I am.

Ryan and I ventured over to Pearl Street the other night to try out the new restaurant in town SALT.  Rumors have it that they spent around a million bucks fixing the old building up to make it what it is… and as we admired the renovations – I could imagine they probably did.

Long story short, but the previous restaurant in this location was Tom’s Tavern and it was once a hot spot for good burgers in Boulder… but my experience there last year was nothing short of horrible. No wonder it was up for sale and snatched up by a well-known chef of the area.

Anyways on to our meal, I was pleased with the menu, showcasing locally grown ingredients. The place was busy, as expected, and our service lagged because of it.

I did read a condensed history of salt on the menu while waiting for service, which was quite interesting.  On to the food…. I ordered:

Roasted Beet Salad + Soup Special of the night (tomato something..)

The soup was good. Decent flavor and you could tell it was fresh. The salad was tasty, but I felt it lacked the goat cheese it mentioned on the menu. Definitely was very sparse.

Main entrees included:  Roasted Vegetables + Burger and Fries

Obviously you know who ordered what. Ryan is a burger man while I inhale veggies.

Overall I was pretty pleased with my dishes and Ryan was as well. Quite frankly, it was not anything out of this world. But  I imagine we will go back again down the road once it loses its “newness” appeal and hope that the service gets a bit better.

One thing that makes me a bit uneasy about restaurants is when they don’t offer a gluten-free menu. Our waitress promised if I told her to it needed to be gluten-free she would have the chef prepare it that way, but I like a little explanation of what they are doing different to the dish, than the normal one.

I did have somewhat of a stomach knot later that night and I am curious as to whether or not it was because my meal was not prepared gluten-free…. but that is the chance you take when eating out!

Give this place a shot if you live in the area.

Super Deelish Chocolate Bite Size “Brownies”

With the addition of the Vita-Mix to my life I have been playing around with recipes and making some fun creations with what I have on hand.

So I was craving something chocolate and simple so here is what I came up with:

Sorry for the bad lighting.

In a VitaMix or food processor put in:

1/2 cup raw cashews (or almonds or any other nut you would like)

1/2 cup pitted dates

Vanilla Extract to taste.  Approx. 1 Tbs.

Shredded coconut

Anywhere from 3-5 Tbsp. of cacoa powder, depending on how chocolate -y you want them to be!

Simple. Put in the fridge to cool for awhile. And mmmm you have a nice treat for later!

Back to the Beautiful Campus

First day of classes at CU!

Isn’t our campus so beautiful?!

You can’t beat the views, the sun and the giant fields to lay out in. (Ya know, for those afternoon naps between classes)

My schedule + professors + classes seem great so far! Tons of interesting material… Biochem, Biopsychology, Cognitive Psychology and Behavioral Statistics + Research Methods. I am already busy with plenty of homework and reading.

Eats for the day were pretty simple. Smoothie for breakfast, salad + leftover pad thai for lunch,  a post weight lifting workout smoothie and a HUGE salad with split pea soup for din din.

The green smoothie blends in well with the green bowl! Today’s mix —> Frozen Strawberries + Banana + 1/2 C Rice Milk + Drizzle of Almond Butter + Honey + Barbara’s Organic Brown Rice Puffs. Oh and I crumbled a little bit of a PB+J Larabar on top. Super calorie dense smoothie because of the toppings and it didn’t keep me full for long. Maybe I should put protein powder in my morning smoothies?

Not sure why, but I was cravvinngggg carbs at lunch. This whole no wheat – buckwheat – oats – rye – barley diet is making me crave carbs more often. Ugh! I made a salad with mixed romaine + quinoa salad + 4 fingerling potatoes + 4 dates and a little Bragg’s Liquid Aminos. The Bragg’s seemed crazy salty + not so good.

Dinner was freakin’ awesome. I didn’t eat until late because Ryan and I shared a protein smoothie after we lifted at the gym around 6.  It kept me full until 9:30! So then I made a stop at Whole Foods and grabbed a ton of fresh veggies from their salad bar + cup of Split Pea Soup. I definitely filled up fast and am keeping it for leftovers tomorrow!

I bought a small journal to keep with me at the gym to write down my weight lifting routine. I plan on sharing it in the future, but I want to know what some of your favorite weight lifting plans are.  I am researching and looking to switch my routine up! Let me know and have an awesome night!

I Like Food

I’ve been starting my mornings off with these most of the time. Typically the mix includes (unsweetened) almond/rice milk + handfuls of spinach + frozen strawberries + other fresh fruit on hand. Yesterday it appeared to be a peach! Typically I always throw in ground flaxseed…but that would be packed up in storage until I move into my new home. Which will be soon. Super duper soon.

Thanks to Cecile, I have been able to test out the vanilla flavored Sun Warrior Protein Powder.

So far it has tasted yummy in all my smoothies. Blends super well and doesn’t have a “chalky” protein powder taste at all! It tempts me to buy some, but I still really like my hemp protein powder.

I know I said I was going to blog my meals and I obviously took a couple days off, but I am catching up! As you saw above, my breakfast from Friday was the smoothie topped with Barbara’s Organic Rice Crisps + drizzle of honey. Lunch consisted of a chinese chop salad from California Pizza Kitchen. I met my grandma + uncles for a wonderful lunch date + great conversation.

The salad wasn’t that great. I asked if they had any gluten-free dressings and I was told they cannot guarantee what ingredients are in the dressings! How scary is that! I opted for oil + vinegar and tossed the salad myself. Another reason why most restaurant chains bother me.

Dinner was great! Cecile and I cooked up a sweet potato + lots of other ingredients dish wrapped in collard greens. It was quick + easy + tasty. I will post this recipe at a later date. We each had two collards but weren’t satisfied. So we decided some fruit + quinoa salad + rice crackers should be served up.

Mmmm…  we also dug into some peanut butter + baked plantains later that night. No pictures there but mmm it was a tasty late night snack! Speaking of snacks, I have found a favorite dark chocolate. When I say dark, I mean DARK 91% cacao!!!

Anyone ever had this brand before? I am picky about dark chocolate. I opt for bars with no dairy or soy lecithin in them. What are some of your favorite dark chocolate bars?

My Challenge to You

Hey guys! I am in Denver this fine Saturday soaking up the beautiful Colorado weather. Ryan is finally flying back to Boulder today so I am picking him up very shortly. I spent the evening with the wonderful Cecile, cooking up a great dinner and making a quinoa salad for the week. More details on that later.

I had some great conversation yesterday with my family over lunch. They asked me some great questions and it really got me thinking. I would like to share with you some of the main points that really stimulated my brain:

Start simple. When beginning to incorporate healthier foods, habits and exercise into your life it can feel overwhelming. Don’t expect yourself to be perfect or an expert in a day. I notice many people feel it’s too much work to eat healthier or exercise more, but in actuality we make ourselves think this. Mental health is just as important as physical health.

Write Goals. Make a list of why you want to start eating healthier, exercising more or whatever steps you are taking to live a better life. Why? Because there are going to be days where it’s hard and you lack motivation. Whip out that list and look at it. Write down absolutely everything – even things you would never tell a soul – and read it. Reminding yourself of what you want can help overcome these mental struggles.

My challenge to you for starting simple is this:

ELIMINATE EVERYTHING WHITE IN YOUR DIET.

Be for real with this. Get rid of that white bread, white rice, white flour and white pasta. Try this for 14 days and see how it goes. Read labels. Look for processed sugars and flours. These are completely void of all nutrients! Your body processes it fast and stores it to your butt, thighs, stomach and all those other places we don’t want extra pounds.

After trying this, jump head first into it. Seriously. One of the best ways to ease yourself off  processed sugars and flours is to do it cold turkey. Avoid those packaged muffins, cookies and crackers. Make your own at home or find a brand with better ingredients. Read labels and be smart!

Obviously keep eating cauliflower, onions, eggs and healthy fresh fruits and vegetables that are white…. but my main point is to get rid of processed whites!

Paying for a Late Night

I love going out and socializing with friends. But last night I had a few too many drinks. I don’t drink beer, therefore I resorted to hard alcohol. I sometimes struggle with this, especially being in college… and going to CU. Provided I don’t drink often, but I do feel the pressure every now and then.

My consumption of alcohol from last night led me feel a bit “blah” today and my stomach was furious at me all day. No breakfast for me! I went straight to Whole Foods and met a friend for lunch from their tasty salad bar!

I ate the whole thing. Yeah…. lots of greens in my belly!

I finished this bag of treats up during the afternoon as well. There weren’t too many left, probably about 8 little “cookies.” I gotta get more of those! Anyone else a big fan of raw treats?

Later on I devoured a peach, which was so ripe and juicy. Colorado peaches have to be some of the tastiest fruits. I have never had better. I decided to advertise for Helly Hansen in this photo (typical college boy coffee table!)

I had a serious hankering for carbs around 4. I have no bread here – I am still trying to decide what bread I want to start buying now. It’s hard to find  bread that doesn’t contain of my grain allergies with superb ingredients. Any suggestions?

Anyways, I boiled up some organic fingerling potatoes. I really love these. Dipped in kethcup and this totally satisfied my craving. I had 5 of these baby taters.

Dinner was over at my friends house. She just finished redoing a new house and they had a house warming BBQ.  I typically just bring my own food to BBQ because I never know what food will be there. I like to be prepared, I brought my own salad + hummus. It was delicious. I also snacked a few potatoes from the potato salad. I’m not really sure what was in it, but the mix was light and so they were tasty.

Overall, I felt pretty good about the day. I just wanted to give my body nutrients and apologize to it for giving it alcohol the night before. I am so tired and going to read a book and hit the sack. Hope you all have a relaxing night.

Yummy In My Tummy

So here are my eats for the day. I am feeling like I ate a lot today. It’s definitely been a struggle to not give in to emotional eating today. I wonder if stress is the underlying cause.

This morning was a simple 2 egg omelete (spell check, please!) with a large handful of spinach and fresh grated raw goat cheese. I picked this cheese up from the farmers market on Saturday. Delicious!

Topped off with a delicious peach from the market as well. I didn’t eat breakfast until 10 because I just had that “full” feeling in my stomach. Maybe because I ate a late dinner the night before?

Lunch was around 2:00. Work was busy and I had to pick something up fast.(check out my kiddos in the background!)  So I stopped at Mad Greens and order the Crazy Ivan w/avocado in place of goat cheese + no croutons + no dressing. Salad consisted of pumpkin seeds + beets + avocado + tons of greens!  I love salads from there.

My snack of choice for the afternoon were a couple handfuls of these raw “super cookies.” I absolutely love these bad boys. Soooo tasty, but kind of pricey so I don’t buy them that often.

Annnndddd out of boredom I snacked on a handful of potato chips. Work was boring. I was tired. They sounded good and they appeased my taste buds. I did not eat the whole bag, probably had about 7 chips all together.

I drank all 50 oz. of my water this afternoon. I was so proud of myself. I really, really, realllllyyyy need to start drinking more water on a regular basis. One of my worst habits!

I owed my friend Sam dinner and finally cured my Indian food cravings by going to Tandooi Grill.  I definitely was full, and probably overate a smidge because it tasted so good. Started off with a salad and snagged couple bites of lamb from an appetizer plate. I always put mango chutney on my salad from here, gives the boring iceberg lettuce some flava!

Ended up eating about 1 cup of basmati rice with that much saag. Lots of food. very full, but craving fulfilled.

Anyone else have a hard time not overeating with Indian food? The wonderful flavors and spices make it hard for me to stop eating… yikes!

The day was weird. My stomach was hard and full almost the whole day. I felt I probably could have gone the whole day without eating, but come on, a girl can’t do that (or at least I can’t) !

Raw Dinner from a Million Years Ago

 

Yeah that’s right. Some dinner from a million years ago. I made this way back during the months of school. When cooking always seems 100% more fun because I have less time. Isn’t that how it always goes… 

 

This recipe was from Gena over at Choosing Raw… I am not going to retype the exact recipe here. So if you want specifics, click here

I have been super interested in trying out this “zucchini noodle” so I finally decided to. But the catch was I did not have a spiralizer (and I still don’t) so I decided buying a mandoline would be a great investment, since I had been wanting one for soo long. I took the plunge and paid about $70 for this Good Grips Slicer

 

I hated it. Seriously. Not worth it. Plus it cut me. So poo on it. If anyone else out there has had success with it, let me know what I am doing wrong. It was work to get all my vegetables to look like this:

 

Zucchini + carrots + cherry tomatoes + fresh basil  the trick to cutting basil into small pieces?

Roll the basil leaves up fairly tight…

 

Mine weren’t that tight… but tight enough they cut up well. Then cut. Simple. And adds tons of flavor. 

 

 

 

Back in the day when I used the MB for everything... here is what I threw in:

1 1/4 c cashews, soaked for a few hours

3/4 c water

1 tsp agave 

1/3 c lemon juice

1/2 tsp sea salt

1 tsp brown miso paste 

But I added a bit more agave… because it was a bit blah for me at first. I want to play around with this recipe because I feel like there could be so many awesome variations. 

 

1 ¼ cup cashews, soaked for a few hours (I just put them under water when I left for work in the morning)
¾ cup water
1 tsp agave
1/3 cup lemon juice
½ tsp sea salt
1 tsp miso

BAM. There it is. i mixed a fair amount, but not all of the cashew sauce in with the vegetables. I wasn’t sure how I felt about the whole thing..

While I absolutely loved the first few bites, it slowly started to get “not as tasty.”  Ryan agreed. It was fun and tasty at first, but not we just got sick of it fast.  I think I contribute this to the cashew alfredo sauce. Possibly I put too much?

 

 

 

Here is my one flaw with raw.. sometimes all those sauces, dips and pates can be a little, well – too rich on the nut side. It feels heavy inside me and upsets the tummy. Odd.

On a final note, I returned the mandoline and received a full refund. Definitely a disappointment!

I am still hunting for the prefect mandoline, but a now a little more weary. I would love to hear from others about this.
