Shrimpin’ It Up

Here is a quick and delcious meal I cooked up last week. Shrimp skewers are on sale at Whole Foods right now… 10 for $10! So I picked up Tequilia Lime and Spicy Cajun flavors.

Start off by cooking 1 cup of quinoa in 2 cups of water. For cooking quinoa I always let the water + quinoa boil for about 5  minutes then lower it and let simmer for another 15 or so, until you can see the germ line. Ryan and his roommates were grilling so we decided to throw the shrimp on as well and let cook.

The boys had ridiculous amounts of meat on there…. I tried to keep my poor little shrimpies away from the other meat. While those cooked I tosed all this in the quinoa:

* 2 cups of steamed brocolli and spinach

*Handful or more of slivered almonds

*2ish tbsp. of Curry powder

*1 can of Organic Peas

*Half a can of mixed soup beans/any beans would work + that was all I had on hand

I also used a random assortment of other spices for flavor so go ahead and get experimental with this mix! I really had no intentions of mixing this quinoa with the shrimp, but we decided to.

The final creation was flippin’ delicious and so filling! I had leftover pita so Ryan put all his inside that and ate it that way. I also had a little pita with some stuffed inside and it was marvelous. In fact, it was much tastier than eating it alone. But I had already had my fair share of carbs for the day, so I ate the rest of my portion in a bowl.

I had plenty of leftovers and had this for lunch a couple times later in the week. This is so simple and delicious. You should definitely try it out! I am starting to realized I enjoy cooking with quinoa but don’t seem to have many ideas for different recipes yet.

Bruised to the Bone

Well I got a big workout in yesterday! And not an ordinary one by any means…
This workout was CAVING! And seriously, it wore me out… and beat me up!

We were on the road to Colorado Springs by 6:30am and met up with 3 more people along the way. Once there, we stopped at Cave of the Winds to get the keys to the cave (it’s gated!!) and sign permission waivers.

After a little off road driving and a steep hike, we found the entrance. It was nothing more than a metal tube in the ground. This was the first gate of the cave needing to be unlocked…

Why are caves gated?
It is a means of cave and landowner protection by controlling access (and in some cases no access) visitation of the cave. Reasons such as liability issues, vandalism and theft of precious cave decor (cave bacon, stalagmites etc.) have prompted the insertion of gates.


In order for us to have access to this cave we have attended Grotto meetings once a month. Grotto meetings are basically groups of cavers who meet to discuss and share caving trips and safety…. and they also have the keys to many gated caves Luckily enough we were finally invited to explore with them….

The cave was amazing. This was our first “real cave” experience….. Fault Cave is not much of a cave. There were plenty of hugeeee rooms, lots and lots of crawling and squeezing through narrow passages (calling for some awkward movements!) We spent about 5.5 hours in the cave… not kidding!

Luckily, I had knee pads.. but no elbow pads. Halfway through the trip I already had bruises forming on my arms and elbows… and today I woke up with more bruises all over than ever before! Would I do it again…?

HECK YES! Dirty + Muddy + Bruised + Tired and I would still do it again. It was quite the workout and once home I was exhausted and bed time came very early. Since we had a pretty epic day we decided to stay in Boulder for the Fourth instead of caving more.

BimBamWho? BIMBAMBOO!

I have been away from the computer lately. I feel I have needed a break to sort things out. I have been stressed lately and I am not sure why.…What do you do to relieve stress? Any suggestions?

As promised, here is my review of a local Boulder restaurant called BimBamBoo:

Not surprisingly I was craving sweet potato fries (uh my weakness) so we started off with an order to share. I was impressed and thought they had good flavor. It was an ideal summer night on Pearl Street and the decor of BimBamBoo contributed to the summer ambiance. I was also stoked to find out they had a vegan menu….

I ordered the Tofu Salad Bowl that was on the vegan menu with soba noodles. I am still not sure if this is the same tofu salad bowl offered on the main menu…. but I must say it was damn good! I was very happy with the mixture – soba noodles + romaine lettuce + bimbamboo slaw+ herbs + sprouts. The dressing/vinagarette was a perfect addition. This was very filling, but felt very fresh. I would not hesitate to eat this again!

Ryan had Bengali Grilled Wild Salmon + Tikka Masala Curry Sauce + Cool Cucumber-Mint Raita. Ryan was not as thrilled with his choice compared to mine. I think he was expecting something different from the description. I had a taste and liked the way the salmon was cooked, but I was not too wild about the other flavors. It was so-so. Ryan admitted he liked my Tofu Salad Bowl more than his.

Overall I thought my dish was good, but the service was not as great. We went for a long period of time with no water, which really bugs me. I loooove my water with dinner, so besides the water dilemma, all was good. We were told they make all desserts in house and even have vegan options. We were so full we opted out on a sweet treat.

It’s a great restaurant for good noodle bowls + fresh options + plenty of food. I think I may hit this place up for lunch sometime soon.

July 3rd: Boulderites Can See Food, Inc.

This morning I received an e-mail from Magnolia Pictures regarding their new movie Food, Inc. which was recently released in NY and LA. They informed me that on Friday, July 3rd Food, Inc. will be opening in Boulder.  They specifically wrote in their email:

“Due to the film’s messages about the importance of purchasing local, sustainable foods and the dangers of the industrialization of food, we think that your site’s audience would strongly identify with ‘Food, Inc.’”

Smile! You're at Happy Noodle House

Two posts in one day! Enjoy :)

As a part of our “New Restaurant Friday” we chose Happy Noodle House, which is located around 9th and Walnut. I checked out their website to read a little bit more about what their dishes may entail…

“Happy is fresh, unique and affordable Asian inspired cuisine paired with attentive and friendly service and unforgettable handcrafted cocktails.”

So did Happy Noodle House live up to this description? T

Maybe we should ask Ryan. He looks pretty darn serious ;) To start, we were able to get a table without any waiting, which surprised me – as it was 7:15ish and a Friday night. I liked the simplicity of the decor. For being fairly small, the restaurant definitely allowed for maximum seating capabilities by seating people at long tables with benches. So you shared the same table with others, but it still felt private. They also had a large outdoor patio which looked great. We opted to sit inside because we didn’t want to wait …

We typically don’t order drinks when we eat out, but tonight I was craving something refreshing and summery + I had heard fab reviews about their cocktails. Our waiter recommended the Green Tea Pimm’s = pimm’s #1 cup + zen green tea+ liqeur+fresh muddled citrus. It was absolutely perfect. I smooshed up the mint (like you would with a mojito) and it couldn’t have been better! I was thoroughly impressed with that drink…Great recommendation!

Ryan ordered a Mai Tai and wished he would have ordered a beer – personally I felt the Mai Tai was wicked strong and Ryan even mentioned that as well. I would like to try some of their other concotions in the future.

I did enjoy their menu and our waiter was very helpful identifying the vegan dishes when I asked him. For their bowls and plates they had one vegan dish made with tofu but I was not in a tofu mood. Their small plates interested me more instead and of course I had to try some noodles… I mean come on it is the Happy Noodle House ;)

I ordered the Spicy Peanut Wok Charred Greens + Udon Noodles + Crispy Greens. I ended up mixing the charred greens with the noodles to make my own little noodle bowl. I loved this, the flavor of the greens was perfect. There were peanuts mixed in with the fresh tasting greens and they made the Udon Noodles extremely flavorful.

The Crispy Greens dish was by far my favorite of the three. It was brussel sprouts, spinach and arugula quickly fried with canola oil + sea salt and a seven spice seasoning. They were so crispy and light, I devoured them. They reminded me a lot of bake kale chips, as they had a nice crunch to them. Mmm I highly recommend these.

Ryan had the Happy Ramen bowl = cha siu pork +green onion + braised mushroom + roasted garlic + watercress. Ryan said the mushrooms in this bowl were amazing. I had one and yes they were amazing – they were sweet but flavorful.

Overall Ryan said the dish was pretty good + liked the broth + noodles were tasty + somewhat plain in flavor. He noted that he would definitely eat it again.  Ryan did not use any of the Siracha or Hoisin sauce provided at the table. So I do believe those would be tasty in the bowl as well.

About halfway through our meal we were offered a sampling of their Fried Rice. I did not find this on the menu. We both enjoyed the rice and ate all of it- okay so really I ate almost all of it.  I loved the texture of the rice because it had wheat berries mixed in along with spinach, sugar snap peas, shrimp and pork. I picked around the meat and ate the shrimp. I typically don’t go for fried rice options… but this one I may have to try again.

Overall, the service was fabulous, food delcious and very afforbable. If you are in the Boulder area I recommend stopping in and trying Happy Noodle House. They are new to the Boulder scene as of Feb. 13th of this year… and they just started serving lunch as well. We both agreed that we would definitely be visiting this restaurant again and recommending it to our friends and others looking for a great, affordable meal.

Ironically enough, later that evening we ran into our waiter on Pearl Street. He told us that after they are done serving food at Happy, they keep the bar open until 2am. If you enter through the back entrance you can enjoy their drinks late. What a great tip! I would have never known this without him. So maybe I can enjoy my Green Tea Pimm’s after hours  ;)

Food Inc.

Good afternoon everyone. Today is shaping up to be a busy one. I am once again studying for an exam…. I am going to put up a full post later tonight. For now I wanted to leave you all with a movie trailer for Food Inc.

The Saga Ends

The race went well. We started out on the words “GO!” We raced down the road in a tight group, drafting off one another. The race separated a little bit once we reached the right hand turn into the canyon. From here it separated more as we climbed to the rim of the plateau. This was followed by a slight uphill to the first downhill descent.

We flew down the descent flying over rocks and loose dirt and arrived at the check point amongst several other teams. We hurriedly switched into our running gear and adorned ourselves with climbing harnesses. We ran over to the 275 foot repel from the rim of the canyon to the canyon floor. We nervously stepped off one at a time – zipping down the rope – with spectacular red rock cliffs all around and a gleaming blue sky surrounded us. Once we had all gathered at the base of the cliff, we started our trudge back to the top. After several hundred feet of elevation gain and even more miles under our soles, we arrived back at our faithful steeds (our bikes).

We quickly changed back into riding shoes and gear and took off down the trail. We went down a small valley which opened up to the side of a cliff. This opened up over the main cliff walls and there was a small road that skirted left along the cliffs to the rocky floor below. From here we quickly hopped on a paved bike path and raced down to the Colorado River. *NOTE: The cross tires seemed to be the supreme choice for this race – flying through the uphills and fats* We had a quick change and jumped into the kayaks to start on the slowest part of our journey – a 12 mile paddle down the river. We sat there repeating the motions of paddling left, right, left, right down the river that was flanked by giant faces of rock on all sides. After what felt like an eternity and some good conversation with teammates we could finally see the red arch. From a distance it seemed small and as we paddled closer it still seemed small and so far away! But we finally did make it and carried our boats up the ramp and walked through the finishing arch. It was a great personal victory to complete such a challenge.

After the race we grabbed some food and played a quick round of frisbee golf. The course in Moab was one of the best we had seen on our trip. The rest of the evening was pretty laid back. We had a nice soak in the hot tub followed by packing and some National Geographic on t.v. We woke up this morning, a little later than planned, and grabbed breakfast at a little cafe called Eklecticafe. We both had banana pecan pancakes and they were delicious! Then we hit the road but ran into some slow traffic along I-70 near Georgetown. Ryan would like to mention that he is pretty proud of his 4Runner for making it from Moab to Golden on one tank of gas (even with the extra drag of all our gear).

Overall, we both agree that the trip was excellent and we learned a lot about Colorado and Moab. There are many more trips out West to be had after this adventure!

Cross Tire Dilemma

6:00 am rolled around very quickly as Ryan was up and getting ready for his race. We took off in the blistering cold to dump off kayak gear at one of the transition areas and sped through the canyons to the start area. It was a cool atmosphere to be in as people were showing up checking their gear and mentally preparing for the race.

Ryan and his teammates seemed prepared, but questioned how many layers to wear to start the race. Once again the temperature was in the 30’s this morning so the race started off chilly. They took off of to the start line, which was under the big, red Adventure Xtreme arch, and off they went!

They begin on mountain bikes, then run, repel, followed by mountain biking again to the Colorado River to kayak. There are very few transition areas for me to actually see them during the race, so I am hanging out in Moab making a list of things to do because the reality of school is finally hitting me. (Very sad!)

The rest of yesterday was filled with packing, map reading and meeting new people. Ryan spent most of the afternoon packing up gear, and as I had mentioned, was in “race mode” – which totally cracked me up because he was so anxious and had a very “go go go get things done” mentality. We sped over to registration and Ryan introduced me to a ton of new people. It appeared to me that the Adventure Racing community is very friendly – people were very nice to one another and conversational. I personally loved meeting these people and hearing their stories and histories. Around 7pm or so we met up with Ryan’s teammates at Pasta Jay’s. It was great to finally meet up with new people for a night out. We had such great conversation and a yummy dinner.

Ryan had purchased a pair of cross tires to put on his mountain bike for the race. The reason for doing so is that much of the course is on a paved bike path and the other dirt roads did not seem too loose or sandy, therefore Ryan felt he could go faster with the new tires. We switched tires up, I learned for like the third time (and I still forget what I am doing!) how to do this and took it out for a test ride. Ryan felt pretty confident about this choice so I am interested to hear how they work for him. Let’s stay positive and predict that they made him much faster!

But I am off to the next transition point. Ryan’s mom recommended to arrive a bit early  so I am going to take her word for it. I know they have more experience in following these races than I do! Hope you all are having a great Saturday !

Friday?!

First off – where did the week go? I am having a hard time realizing that spring break is almost over… the thought of going back to scho- nope I am not even going to say it yet. But presently I am hanging out in a very laid-back relaxing coffee shop on the Main St. This morning we packed up our bikes and took a second attempt through Arches National Park.

The outside temperature still read 35 degrees when we took off up the road, but we pedaled through the cold. We road around an hour and a half or so – a nice easy ride on the hilly desert landscape. Minus the cold and the ride would have been perfect. (Or maybe I just need to toughen up!)

The rest of the day is dedicated to getting prepared for Ryan’s adventure race tomorrow. He is officially in “race mode” – packing and reading maps. He was asked to race with some other people from the Front Range area and they should be arriving in Moab soon. I believe this evening we will meet up with his teammates at Pasta Jay’s and probably continue preparing for the race. We woke up to a beautiful morning here in Moab. Our campsite was a perfect pick with the sheer red rock cliffs all around and the Colorado river flowing by – it was a gorgeous sight. Ryan and I had plans for a busy day so we took off quickly from the site and headed to a climbing area by the name of Wall Street. Pretty clever name!

Today was my first time climbing so I was ecstatic to get out a try the real thing. The road was flanked with sheer faces of red rock and made me a little nervous. Luckily, Ryan had a good spot in mind and we parked the car and headed up to the anchor in the rock. Oh and we better not forget to mention the awesome indian hieroglyphs etched into the red rock walls! This area is so rich in history – I love it! Anyways, back to the climbing, we chose around a 50-60 foot face and anchored in. The first ascent I was shaking, unsure of myself and my ability to make it to the top! After that first climb I felt comfortable and decided this just might be a new hobby to add to my list. Ryan had a nice set of blisters on his hands once we were finished.

After climbing, we gathered the gear and took off to fill our growling stomaches. I insisted we went to a local smoothie/sandwich joint (The Peace Tree) that I had eyed the few times we drove through the touristy Main Street. Mmm I was super satisfied with a carrot, celery, ginger and cinnamon juice blend. Ryan had a yummy strawberry smoothie as well. Recharged and ready to go back out we were thinking about road biking through Arches National Park but the weather had other plans in mind for us.

The temperature drastically decreased so a nice drive through the park sounded better. My jaw dropped as we entered the park – the desert landscape was speckled with sudden jutting rock formations. If you get the chance I highly recommend visiting this park. Not too far into the park we could see a faint gray curtain of rain coming towards us. About ten minutes later we were in the middle of a freak snow storm! Going back into Moab sounded better than driving through the snow.

Instead of roughing it in the cold snow, we found a hotel and booked a room for three nights. Piles formed around the edges of the room and bikes were leaned up against the sink area. Check out the photos… you will understand what I mean! We followed up unpacking with a quick run out in the crisp air and found some din – din. We had dinner at Miguel’s – very tasty and fresh mexican restaurant. Tomorrow looks promising as the weather is suppose to warm up to 56!
